"It's the best culinary school in the world."

Paul Bocuse, world-renowned French chef for more than 60 years, The Culinary Institute of America has been at the apex of the food world. It first opened back in 1946 as the New Haven Restaurant Institute in Connecticut with three instructors; a chef, a baker and a dietitian. It was a vocational school for WWII veterans and offered a 16-week program. As the food industry grew, so did the school. By 1965 the enrollment grew to 400 students. With continued growth, the school needed a larger facility so it moved to a former Jesuit novitiate in Hyde Park, NY where it continues to prosper. In 1981, the CIA became the only school authorized to administer the American Culinary Federation's (A.C.F.) master chef certification exam. The CIA employs the largest concentration of master chefs certified through the exam. Today the CIA currently enrolls more than 2,700 students in its degree programs and employs more than 125 chef-instructors and other faculty members representing 16 countries.

The National Park Service administers the Home of Franklin D. Roosevelt National Historic Site. President Roosevelt bequeathed his 35-room home, Springwood and much of his Hudson River property to the federal government as a gift to the American people in 1945. Franklin D. Roosevelt Library & Museum is one of our nation's eleven presidential libraries administered by the National Archives and Records Administration. Designed by FDR himself, it is the first presidential library and the only one ever used by a sitting president. The Museum offers permanent and changing exhibitions, K-12 curriculum-based educational programs and public programs, including a World War II "Bivouac" and USO Show on Memorial Day weekend.

Arrive at the Franklin Delano Roosevelt Home and Museum, "All that is within me cries out to go back to my home on the Hudson River" FDR. This quote captures FDR's connection to Springwood, the estate that he loved and considered home. The first US Presidential Library was started here by FDR.

2:00 p.m.

Begin a one hour guided tour of FDR'S Home. Learn some interesting facts about the only President elected to four terms. After the tour, on your own, to explore the Museum.

4:30 p.m.

Depart for home.
